The Land Behind the Flavor
El Salvador's La Libertad region sits at the foot of ancient volcanoes, where mineral-rich soils, consistent rainfall and cool mountain temperatures create ideal conditions for specialty coffee.
Our farm sits between 1,000 and 1,350 meters above sea level, an altitude that slows the cherry development, concentrating sugars and building the complexity that specialty roasters love.
Our Story
Araucarias Coffee is a family-owned farm and export operation rooted in the highlands of La Libertad, El Salvador. Our journey spans generations of dedication to the land and the craft of growing exceptional coffee.
Named after the majestic Araucarias trees that crown the top of our farm, Araucarias Coffee honors both these ancient evergreens and El Salvador's reputation for sweet, balanced, and comforting cups.

Shade Grown
Finca Montecristo is farmed under two distinct strata of native mountain shade trees. Both layers are composed of forest species that support the migratory corridors of birds traveling through the Mesoamerican Biological Corridor, of which the farm is a part. This shade management creates the natural microclimate that drives optimal cherry maturation that our roasters rely on.
Environmental Stewardship
The farm contains native forest composed primarily of balsam and endemic mountain species. Two of El Salvador's rivers originate from water sources within the farm's boundaries, a responsibility we take seriously in how we manage water use throughout our processing operations.

A Salvadoran hybrid known for its disease resistance and balanced cup with chocolate and citrus notes. Resilient, complex and deeply rooted in the identity of Finca Montecristo.
Pacas
Salvadoran heritage
A natural Bourbon mutation discovered in El Salvador, prized for its sweet, clean cup and adaptability to high altitudes. Compact trees, high productivity and consistent quality year after year.
Sampacho
Rare and full of character
A unique variety that delivers a rich, full-bodied cup with deep sweetness and layered complexity. Distinctive in the cup and rare to find at this scale.
Parainema
Modern specialty-grade resilience
A Honduran-origin hybrid with excellent disease resistance that still delivers specialty-quality cups with bright acidity and floral notes. Proof that resilience and quality can coexist.
Castillo
Versatile and dependable
A Colombian variety bred for rust resistance while maintaining excellent cup quality with nutty, caramel and mild fruit characteristics. Reliable quality in every cherry.
Pacamara
El Salvador's bold, oversized classic
A cross between Pacas and Maragogipe, native to El Salvador. Known for its large bean size, full body, vibrant acidity and complex floral and fruit-forward notes. Bold and distinctive.
Marsellesa
French heritage, tropical soul
Developed by CIRAD in collaboration with Promecafé, offering rust resistance with a sweet, balanced cup profile and pleasant acidity. A modern variety with Old World roots.
Anacafe 14
Guatemalan precision
Developed by Anacafé in Guatemala for its resistance to coffee leaf rust while producing clean, sweet cups with good body. A specialty-focused solution to one of coffee's biggest challenges.
Bourbon Chequina
A Bourbon with a twist
A distinctive Bourbon selection that maintains the classic sweetness and red fruit character while offering improved agronomic performance. Heritage flavor, modern resilience.
Bourbon Rosado
Rare pink-cherry beauty
A rare pink-cherry Bourbon mutation prized for its delicate floral aromatics, bright acidity and silky, tea-like body. The most exclusive variety on our farm.
